Cooking with sweet red wine can enhance many different types of food.
Professional and amateur cooks often use sweet red wines in recipes for meats, fish, sauces and desserts. The cooking wines can range from slightly sweet to sweet and tart, but whatever their level of sweetness, they often add a refreshing taste to an otherwise staid recipe. Cooks who use sweet red wines should learrn about the various techniques and hints that experts provide for cooking with red wine including types of wine, when to add the wine to a dish and judge the need for additional wines. Instructions
1. Add sweet red wine to a dish about ten minutes before you intend to finish cooking. Allow the wine to simmer together with the other ingredients. Don't add the sweet red wine immediately before you finish cooking the sauce, as it will give the dish a bitter or harsh taste.
2. Don't add too much sweet red wine to a dish. If you already included some sweet red wine in a dish, let it cook for about 10 or 15 minutes to allow the dish to absorb the flavor. After this period, taste the dish and then decide whether you need to add more wine.
3. Don't use sweet red wine for cooking if the bottle was open for a long period of time. If an old bottle of sweet red wine was, at least, half full, you can use it during the course of the following two weeks. If the bottle was mostly full, you can use it over the course of the following month.
4. Substitute unsweetened apple juice or orange juice together with one teaspoon of vanilla extract if you don't have enough sweet red wine for a recipe.
5. Serve a dish that contains sweet red wine together with a light sweet red wine as an accompaniment to the meal.
6. Don't use a "cooking" wine when you cook. "Cooking" wines have additional sodium content and are an inferior wine. Use regular sweet red table wine if you want to add sweet red wine to a dish.
7. Cook with a a fortified sweet wine such as port, sherry or marsala for a rich sauce.
8. Marinate chicken or meat in a sweet red wine together with herbs including basil, oregano and marjoram. After the meat finished marinating, cook the meat in the marinade.
9. Flavor desserts such as puddings, mousses, souffl s, and dessert sauces with sweet red wine.
Drizzle the wine over fruit or add them to a syrup that you brush on a cake.
