Mountain Oysters Definition


"Mountain oysters" may sound intriguing to folks who have never heard of them. Oysters in the mountains? Do they hide under rocks in creeks, waiting to be found, cracked open and fried? Before you indulge, read up on this delectable dish. Add this to my Recipe Box.


What are They?


Turn away from the creek and look toward the pasture: mountain oysters are peeled and cooked testicles, usually from bulls, although lamb, pig and goat testicles are also eaten.


Other Names


Mountain oysters are also known as Rocky Mountain oysters, calf fries, swinging beef, prairie oysters, calf fries and cowboy caviar.


Where to Buy


Mountain oysters can be bought online at specialty meat shops or at local farms (see Resources).


Prepare


Mountain oysters are usually soaked in salt water, drained, sliced 1/4 to 1/2 inch thick, rolled in flour and spices and deep fried. They are eaten warm, often with hot sauce.


Celebrating Mountain Oysters


From Texas to North Dakota, mountain oysters have festivals dedicated to them. Testicle connoisseurs and those who just love to eat them gather to celebrate this unusual dish and party hard with other fans of the mountain oyster.
