Make Chocolatecovered Soy Beans

When eaten in moderation, chocolate-covered soy beans can be a healthy and delicious snack. Soy beans, which are high in protein and fiber, are believed to have numerous health benefits, including lowering high cholesterol and preventing diarrhea in infants. Some studies have even linked soy to cancer prevention and treatment. Make this chocolate-covered treat at home by roasting the beans in an oven to transform them into soy nuts before coating them. Instructions


1. Place the soybeans in a large bowl, and cover them with water. Place the bowl in the refrigerator, and allow them to soak for six to eight hours.


2. Preheat the oven to 350 degrees F.


3. Drain the soy beans by placing them in a colander. Spread the soy beans on a cookie sheet that has been coated with nonstick spray.


4. Roast the soy beans for 35 to 40 minutes to make soy nuts. Stir the beans often to prevent them from burning.


5. Remove the soy beans once they are well browned. Season the soy nuts with salt to taste. Store them in an airtight container until you are ready to coat them in chocolate.


6. Break the large Hershey bars into small sections, and place them in a microwave-safe bowl.


7. Melt the chocolate on high for two to three minutes, and stir at 30-second intervals to prevent scorching the chocolate.


8. Place a small number of soy beans in the chocolate at a time, and stir them around with a spoon until they are coated.


9. Remove the soy beans, and allow any excess chocolate to drip back into the microwave-safe bowl.


10. Place the chocolate-covered soy beans on a sheet of wax paper, and allow the chocolate to harden for at least six hours, or place them in the freezer for 30 minutes.


11. Store the chocolate-covered soy beans in an airtight container.
