Make Microwave Candy Bars

Making microwave candy bars is a quick and easy way to provide snacks for your family and friends (and for yourself, of course). If you re-create famous candy bars with coconut mounds and peanut butter cups, you'll look like a dessert genius. When you make microwave candy bars, begin by melting your chocolate in the microwave. If you take the time to temper your chocolate along the way, the chocolate will look shiny and will melt more smoothly in your mouth. Add this to my Recipe Box.

Instructions


Temper Your Chocolate


1. Chop your chocolate into small pieces and place it in the microwave in a glass bowl, which retains heat well.


2. Microwave the chocolate for 30 seconds on high power and stir.


3. Return to the microwave for another 30 seconds and stir again. Continue this process until the chocolate is melted. As the chocolate sets, crystals will form along the sides of the bowl. Mix the crystals into the melted chocolate---this helps temper it. Use the chocolate before it cools and sets.


Coconut and Chocolate Candy Bars


4. Line your baking pan with foil and spray it with cooking spray.


5. Stir 1 tsp. vanilla into 5 oz. condensed milk. Add 1/8 tsp. salt. Add 2 cups confectioner's sugar, 1/2 cup at a time, and then stir in 14 oz. coconut.


6. Press the mixture into the greased baking pan and add the almonds, evenly spaced across the mixture, if desired. Chill in the refrigerator until firm.


7. Melt 16 oz. milk chocolate in the microwave, using the directions for tempering it.


8. Cut your coconut mixture into bars and dip each bar into the chocolate. Place the dipped bars on a large baking sheet lined with wax paper. Refrigerate them until they're set, which will take about 30 minutes.


Chocolate and Peanut Butter Cups


9. Mix 1 cup peanut butter, 1/3 cup confectioner's sugar, and 1/4 tsp. salt in a bowl.


10. Melt 16 oz. milk chocolate in the microwave, using the directions for tempering it.


11. Grease the muffin tins or line them with wrappers and spoon some chocolate into each cup. Use a pastry brush or spoon to line each cup or wrapper with the chocolate to coat the sides. Chill in the refrigerator until firm.


12. Add the peanut butter mixture to the chocolate cups, placing even amounts in each one and leaving room for the chocolate top coating.


13. Cover each cup with additional chocolate, using a spoon or offset spatula to smooth the top. Refrigerate the cups until they're set, which will take about one hour.
