The Preparation Of Gooseberries

Gooseberries provide important vitamins and nutrients.


Gooseberries may not enjoy the popular reputation of strawberries and blueberries, but similar to other berries, they offer a substantial amount of antioxidants and nutrients. Raw gooseberries contain 39 calories for each 100-gram portion and provide a good source of vitamin C, potassium and fiber. Gooseberry crops in the United States grow in California, Michigan, Oregon and Washington, but most production of the crop takes place in northern Europe. Add this to my Recipe Box.


Jam


Gooseberries contain a firm pulp that is ideal for jams and jellies. Remove the husk and wash carefully before bringing them to a boil. Add sugar, lemon juice or other fruit juice to taste and boil together for at least 10 minutes before canning. Gooseberries provide tartness and combine well with sweet fruits.


Chutney


Gooseberries' tangy fruit works well as chutney without overpowering a dish. Combine gooseberries with brown sugar, cider vinegar and salt. Simmer between 30 and 40 minutes until gooseberries are tender but not mushy. Finish by adding your favorite spices. Cinnamon and ground cloves complement the tart flavor of gooseberry.


Gooseberry Juice


Gooseberry juice has a history of medicinal use for its cooling properties. The juice was consumed by women during pregnancy to alleviate the effects of the heat. This healthful tonic takes five minutes to prepare. Clean, de-seed and grind a handful of gooseberries. Combine with sugar, a pinch of ginger and salt. Blend with water and strain. Try adding mint to accentuate the flavors of this refreshing drink.


Herbal Remedy


Many herbal remedies include gooseberry powder because of its high vitamin C content and other medicinal qualities. Dried gooseberries can be pulverized using a coffee grinder. Try slow roasting them in the oven or use a fruit dehydrator. Gooseberry powder and warm milk in combination provide relief from hoarseness and cough. Gooseberry mixed with rice, mustard powder and salt may provide relief from nasal infections. Used as an astringent for oily hair, gooseberry powder can be mixed with lemon or lime juice and used as a rinse after shampooing.
