Vegan cuisine is a diet of plants and oils. Practitioners of the vegan diet, known as vegans, avoid all meat or byproducts, including cheese, milk or gelatin, from a living creature. Some vegans practice a dietary method that includes only raw ingredients, meaning that nothing is cooked. In a land known for sausage, vegan restaurants in Chicago are few, but popularity for vegan cuisine is growing. Chicago got three new vegan restaurants in 2010. Does this Spark an idea?


Karyn's on Green


Karyn is well known in Chicago for advancing a healthy vegan diet. She opened her third restaurant in 2010. Her latest, named Karyn's on Green, is located in the Greektown area. The cuisine is both raw and cooked vegan. Karyn's on Green serves brunch, lunch, dinner and desert in a sophisticated modern setting, suggesting vegan cuisine is not just for the earthy set.


Yah's Cuisine


Yah's Cuisine is a vegan soul food restaurant located on Chicago's 75th Street. Yah's serves up candied yams, red beans and rice, eggplant lasagna along with a variety of fruit tarts and veggie burgers. Excluding deserts and burgers, the menu changes daily. Raw.


Raw., or Chicago Raw Foods, is a combination raw foods grocery with a prepared food section, including entrees, sandwiches and sweets. Raw. is on a mission to educate consumers about what it means to eat a raw diet, the health benefits of going raw and sustain the raw diet. Vegan raw dieters do not eat cooked vegetables or fruits, though they will eat combinations of foods that have been prepared to amplify taste and enjoyment.
