Thicken existing chicken broth with pureed vegetables and milk powder.
You may wish to thicken chicken broth if it looks and tastes too watery. However, if you add cream or cornstarch to your broth, you will also increase the fat or carbohydrate content and the overall calorie count of the meal. A healthy alternative endorsed by the American Dietetic Association is to remove some of the vegetables from the broth, puree them in a blender and then stir them back into the broth to act as a thickening agent. For a creamier broth that is still low in fat, the ADA suggests that you add a little skimmed milk powder to the puree, which also increases the calcium content of the meal. Instructions
1. Remove 1 cup of vegetables from your existing chicken broth, such as carrots, onions and celery, and 2 to 3 tsp. of the stock.
2. Pour the vegetables and stock into a food blender.
3. Sprinkle 2 to 3 tsp. of skimmed milk powder into the blender.
4. Process the vegetables, stock and milk powder for 30 seconds in the blender.
5. Stir the vegetable puree into the existing chicken broth.
6. Reheat the chicken broth thoroughly before serving.
